Ingredients

    Brown Rice, long grain, 1 cup
    Beans, black, 2 cup
    Sweet peppers (bell), 1 medium (approx 2-3/4" long, 2-1/2", diced
    Scallions, raw, 0.25 cup, chopped
    Lowry's Seasoned Salt, 1 tsp
    Extra Virgin Olive Oil, 1 tbsp

Tips

If desired, can add 1/2 diced celery, and/or a couple teaspoons hot pepper or jerk sauce. Serves as a fantastic side dish to any other Caribbean food.


Directions

Boil 2.5 cups water, along with seasoned salt and olive oil. Add rice, stir. Cover, and reduce heat to low. Simmer over low heat for 30-35 minutes. Add peppers, scallions, and beans; stir. Continue simmering over low heat for an additional 10-15 minutes. Let sit for at least 5 minutes before serving, to allow all liquid to be absorbed.
