Ingredients

    10 eggs
    2 T Half and Half
    8 slices of bacon, chopped
    1 Cup Mexican four cheese blend (or cheese of choice)
    salt to taste
    herb seasonings of choice

Tips

This is a great make over the weekend type dish to have as grab and gos for quick breakfasts during the week (if they last that long).


Directions

1. Scramble eggs; add in half and half, salt, and herbs and mix well.
2. In a greased muffin tin, put divide chopped bacon and cheese between each muffin well. Top with the egg mixture (again dividing between each well).
3. Bake in a 350 degree oven for about 30 minutes.
