Introduction

Ingredients

    1/4 cup cottage cheese, mashed finely
    2 large eggs
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    2 Tbsp. Splenda

Tips

May use a non- sugar strawberry spread on top when serving if desired. (this has not been factored into the nutritional info.)


Directions

Mash cottage cheese with fork until finely mashed. Add eggs and mix thoroughly. Add cinnamon, nutmeg and splenda. Mix well. Pour into non stick fry pan ~ cook with lid on for 3-5 minutes. (It should smell good and be lightly browned on the bottom). Then flip and cook the other side another 3 minutes- (uncovered). Serve hot. Enjoy!
