Number of Servings: 6

Ingredients

    1 medium Yellow Bell Pepper, diced
    1 medium Red Bell Pepper, diced
    1 cup Broccoli florets, chopped into small 1/2 inch pieces
    1 cup Cauliflower florets, chopped into small 1/2 inch pieces
    1/4 c. Red Cabbage, shredded
    1/4 t. Adobo Seasoning
    1/4 t. Garlic Powder
    1/4 t. Mrs. Dash Original Blend
    1.5 T. Bragg Apple Cider Vinegar
    1 T. Extra Virgin Olive Oil

Tips

This salad may be chilled prior to serving. Note: Mr. Obasi's , original recipe includes pasta. See "Confetti Pasta Salad by Ijendu" for pasta option.


Directions

Place bell peppers, broccoli, cauliflower and cabbage in a large bowl. Add Adobo, garlic powder and Mrs. Dash. Top with Vinegar and Extra Virgin Olive Oil. Stir to mix all ingredients. Serve.

Serving Size: Makes 6 1 cup Servings
