Introduction

This is a twist on regular stuffed peppers. By using the slow cooker (crockpot) you can leave it and return home to dinner ready PLUS it keeps the house cool during summer. Ingredients

    1 sweet onion, diced
    3 cloves garlic, minced
    2 lbs ground beef (I use grass fed but you can use extra lean)
    2 cans Hunt's tomato paste
    3 T chili seasoning (can use more if desire)
    1 T Spicy Brown mustard

    salt if you like

Tips

If you like, at the end you can top with some cheddar cheese (will have to account for it).

Slow cookers/crockpots vary in temperature. So cook accordingly time wise. In mine, food is done in five to six hours on low.


Directions

1. Brown the ground beef, onions, and garlic together until meat is no longer pink. While the meat browns, remove cap and seeds from the peppers. If desire, line the slow cooker with a slow cooker bap.

2. Once meat is done, add the two cans of tomato paste. Mix in thoroughly. Then add in chili seasoning and brown mustard; combine.

3. Fill each pepper with meat mixture. Put each pepper in the slow cooker. Set on low and let cook.
