Number of Servings: 10

Ingredients

    Place all ingredients in Crock Pot:
    Take a 3 lb pork roast (chicken can be substituted for less calories and tastes just as good)
    Dice Celery and toss in
    Slice onion (entire onion)
    1 can diced tomatoes
    1 large can green enchilada sauce (I prefer Las Palmas, but any brand will do.)
    Cummin 1/2 tsp (or more depending on your taste)
    Granulated Garlic 2tsp (or more depending on your taste)
    Salt and Pepper to taste.

    (You may also add in green chilies and/or bell pepper, if you or your family likes, I add it if I have it on hand.)



Tips

I serve this over brown rice, or white rice or over over whole wheat pasta.


Directions

Put all ingredients in the crock pot and turn on low. The longer it cooks the better the meat turns out. I normally cook it from raw state for about 5-6 hours on low, or from frozen 6-8 hours depending on your crock pot.
