Ingredients

    1 package (6.9 ounces) rice a roni chicken flavor.
    1 tbs of margarine or butter
    1 cup orange juice
    3/4 lb skinless, boneless chicken breasts, cut into thin strips
    2 cloves garlic, minced
    1/4 tsp ground ginger
    dash of crushed red pepper flakes(optional)
    1 1/2 cups carrots, cut into short thin strips or 3 cups broccoli flowerets

Directions

In large skillet, saute rice a roni mix and margarine over medium heat, stirring frequently until vermicelli is golden brown.
Stir in 1 1/2 cups water, orange juice, chicken, garlic, ginger, red pepper flakes and contents of seasoning packet; bring to a boil over high heat.
Cover; reduce heat. Simmer 10 min. Stir in carrots. Cover; continue to simmer 5 to 10 min or until liquid is absorbed and rice is tender.
