Ingredients

    2 just-ripe mangos, cubed
    1 just-ripe avocado, cubed
    1 can black beans, drained and rinsed
    1 can sweet corn, drained
    3 scallions, diced
    1 shallot or 1/2 red onion, diced
    1/2-1 (to taste) Serrano chili, minced
    1 bunch cilantro, minced
    1/2 tsp. sea salt (to taste)
    1/2 tsp. chili powder (ancho or chipotle are nice for smoky flavor)
    2 tsp. olive oil
    Juice from one lime

Tips

Don't use avocado that is overripe, or it will break down completely when you stir the salad together.


Directions

Add all ingredients to a bowl and toss until evenly combined.
