Introduction
This is one of my favorite no hassle potatoe recipes. despite the large amount of olive oil, it is actually more healthy than it seems. I love to serve this with a couple choice well seasoned steaks. Makes a really elegant really easy dinner.note: although quite a bit of olive oil is used, the potatoes actually steam in their own juices due to the cracking procedure. The olive oil serves only to brown the skins and keep them from sticking to the pan over the long cooking time. Also, salting the potatoes more than you feel is neccessary provides the best end result, but using less is just as good. It will simply yeild a sweeter potatoe in the end. Ingredients
-
12 small potatoes (red skin, yukon, fingerling) Golf ball size or smaller
Coarse Salt and Freshly Ground Pepper to taste
1/2 cup Olive Oil
2 Sprigs fresh thyme plus 1/2 Tbls chopped fresh thyme leaves
1 clove garlic (sliced)
Special Equipment: A rolling pin or heavy pan
Directions
-In large skillet with lid, heat olive oil on low heat.
-After washing potatoes, on hard surface gently smack each potato with a rolling pin or heavy pan, just enough for the skin to crack and expose the flesh. If the potato breaks in two, discard it.
-Place potatoes in skillet with olive oil and turn to coat. Season generously with salt and pepper. Can be made with less salt if needed. Add the whole fresh thyme sprigs into the pan with the potatoes. Cover and let simmer on low heat, shaking the pan every 3-4 mins.
-When potatoes are golden brown on bottom (about 12 mins), flip potatoes and recover. Simmer for another 10-12 mins, shaking pan occasionally.
-Once potatoes are fork tender, remove lid and thyme sprigs. Allow to simmer for 3-5 mins uncovered until excess moisture has evaporated. Add fresh chopped thyme sprigs and garlic clove (sliced) into pan and simmer another 4 mins untill garlic is chewy.
-Remove potatoes and garlic. Serve warm.
-Makes 3-4 servings.
