Introduction

Ingredients

    2 c oatmeal, ground to flour
    1/2 ts salt
    1/4 tsp cinnamon
    1/8 tsp nutmeg
    2 eggs
    1 c milk
    2 tbsp honey

Tips

Be sure to user certified gluten-free oats if gluten is an issue for you.
This batter can be made ahead and refrigerated; since the oats will absorb liquid, add an extra 1/2 cup water to the batter before refrigerating.


Directions

Grind the oatmeal to a flour consistency in a food processor. Add the salt, nutmeg, and cinnamon. In a separate bowl, beat eggs and add milk and honey. Combine dry and wet ingredients. If desired, allow to sit 5-10 minutes to allow the oats to soak. Spoon onto a hot pan or griddle and cook until browned on each side.

Serving Size: Makes six 6" pancakes, 2 per serving
