Ingredients

    For the cake:
    1 box of yellow cake mix made according to directions (prefer Betty Crocker's yellow or golden vanilla)

    Filling:
    3-4 bananas (prefer greenish yellow, no brown spots on peel)

    Frosting:
    1 8 oz pkg cream cheese softened
    1/3 cup powdered sugar
    1 8 oz tub of thawed Cool Whip

    To thin to spreading consistency: 1/4 cup whole milk (or Pet Milk)

Tips

Due to the perishable nature of fresh banana, this cake is best consumed within two days. To make ahead, bake cake layers and freeze. Do not make frosting ahead as it will "set" and you will not be able to duplicate spreadability as when first made.


Directions

Prepare cake batter as directed on mix box and bake in 3 layers as directed on mix box and let cool.

Using stand or hand mixer, mix cream cheese and milk until very soft.
Fold in powdered sugar, then mix until blended.
Fold in Cool Whip, then mix briefly until blended.

To assemble, place a thin dollop on cake plate and place first cake layer. Thinly spread frosting then slice banana to create a layer of fruit "filling". Place next layer of cake atop the banana layer.Thinly spread frosting then slice banana to create the next layer of fruit "filling". Place top layer of cake and use remaining frosting to cover top and sides of cake.
Refrigerate until serving time.
