Ingredients

    2 heads of fresh broccoli
    juice of 1 lemon
    2 tbs vinegar
    salt
    pepper
    clove garlic
    1/3 cup extra virgin olive oil
    TBS dijon mustard
    1 Tsp Shredded parmesean (optional)
    1TBS Red Pepper flakes (optional)

Tips

Do not oversteam broccoli! 4-5 min yields crisp green veg
additional time leads to mush
Set a timer!


Directions

wash and trim broccoli into 2" florets
peel stems and trim to 1' chunks
steam, covered, 4-5 minutes. *NO longer, as it will result in mushy broccoli, drain
whisk all other ingredients except cheese
Toss broccoli in vinaigrette, chill
Sprinkle with cheese and red pepper flakes before serving
