Introduction

Ingredients

    1/2 pound raw shrimp, peeled, deveined and chopped
    1 cucumber, peeled, seeded, and chopped
    1 red onion, chopped (approx 1/2 cup)
    3 roma tomatoes, seeded & chopped
    1 clove of fresh garlic, chopped or pressed
    approx 1/4-1/2 cup of lime juice
    About 2 tsp Tapatio hot sauce, or to taste
    Salt
    Red Pepper flakes to taste

Tips

Serve in a bowl & eat as is, or with tortilla chips if desired. Also good with sliced avocado on top, but did not calculate recipe including either. This stuff is so good you can eat 2 servings for dinner and still be under 200 calories!


Directions

1. Peel & devein shrimp if necessary. Chop into small pieces and place in glass or plastic mixing bowl. Pour lime juice over shrimp to coat well, mix, and let sit in fridge for 15-30 minutes until most of the shrimp turn pink and opaque.
2. Stir in remaining ingredients and let stand in fridge to develop flavors.
