Ingredients

    two eggs plus 3 egg whites
    1/2 c oil plus 1/4 c water
    1/4 c orange juice plus 1 tsp
    1.33 scant c sugar
    orange rind-grated
    4 c flour
    2 tsp baking powder
    1/2 c almonds sliced and 1/2 c chopped apricots

Directions

Mix eggs, sugar, oil juice, rind.
Add flour and baking powder and sprinkle sliced almonds and cut up apricots over top. Mix altogether.
Add additional flour as needed to make a soft dough. Wet hands with water and shape dough into five log rolls, flatten tops.
Bake 350 for approx. 1/2 hour until bottoms are lightly browned. Remove from oven. Turn oven down to 275. Slice each log into 12 pieces. Return to oven for about 20 minutes until cookies are firm. Freezes well.
