Ingredients

    1 C. Onions, raw diced
    1 Garlic clove chopped
    6 oz Spinach, fresh
    4 oz Mushrooms, fresh
    4 Eggs, fresh, whole, raw
    1 C. Milk, 1%
    1/3 C Heart Smart Bisquick (mix only)
    3 slices Bacon - Farmland Thick Sliced Bacon cooked crumbled
    1 oz. Feta crumbled

Directions

1. Preheat oven to 400 F. - Lightly grease 9 x 7 baking dish.
2. Cook bacon crisp in frypan. Remove bacon to drain on paper towel. Add onion, garlic & mushrooms sauté until tender. Add spinach stir to wilt.
3. In bowl, whisk eggs, milk & Bisquick until mixed well. Then stir in spinach mixture - Pour into prepared dish. Top with Feta & Crumbled bacon.
4. Bake 25 minutes until center is set.
5. Let set 5 min. - Slice - Serve - Enjoy
