Introduction

Ingredients

    1 cup Brown Rice, medium grain
    4 cup Beans, black, rinsed and drained
    1 medium (2-1/2" dia) Onions, raw
    1 serving 1 Med. Green Bell Pepper
    1 stalk, large (11"-12" long) Celery, raw
    16 oz Hillshire Farm Turkey Smoked Sausage
    2.5 cup (8 fl oz) Chicken Broth
    Cajun seasoning to taste (I used the Kroger stuff, but Emeril or other works too)
    garlic powder/cloves to taste

Directions

In a larger sauce pan/small soup pot, saute the onion and turkey sausage with a little bit of olive oil until onions are translucent and sausage is browned a bit. Add the bell pepper and celery and saute a couple minutes more then add everything else (rice, beans, broth and seasoning).

Bring to a boil, then cover and let simmer until rice is done and most of the broth has been absorbed. Makes about 6 1.5 cup servings.
