Ingredients

3 cups grated zucchini
4 cups grated carrot
2 cups finely chopped onions
4 tbsp bread crumbs
1 tsp baking powder
1 cup egg substitute
3 tbsp flour
1 tsp olive oil
Directions
Preheat oven to 375 degrees.
Saute finely chopped onion in 1 tsp olive oil over low heat until soft.
Lightly salt the grated zucchini and let sit for about 10 minutes. Press to remove excess liquid.
Combine the onion with the zucchini and carrots in a large bowl. Mix in bread crumbs, flour, egg substitute and baking powder.
Coat a 9" x 13" pan with non stick spray. Press the vegetable mixture into the pan and bake at 375 for 30 minutes. Reduce the heat to 300 degrees and cook for 30 minutes more. The kugel is done when it is set and lightly browned.
Cut into 8 large squares. Makes 8 servings.
