Yummy, one pot dish that can be used to filled tortillas or eaten plain. Yummy, one pot dish that can be used to filled tortillas or eaten plain.
Number of Servings: 6


    1 pound ground turkey
    1 box Rice a Roni Spanish Rice
    1 can stewed tomotoes, no salt added
    2 ears sweet corn (or 1 can corn)
    Add jalapeno peppers to taste


Brown turkey in skillet. While turkey is browning, slice corn off the ears and set aside. When turkey is cooked through, add Rice a Roni box ingredients as directed and the can of tomatoes. Heat to boiling. Add corn and cover. Lower heat and simmer an additional 20-25 minutes, stirring occassionaly. Serve while hot.

Makes great tacos, tortillas, or over lettuce as a salad.
