    1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 tsp Garlic, minced - McCormick (by EVESRUN)
    1.5 cup Mushrooms, canned
    3 cup Mueller's 100% Whole Grain Penne (2/3 cup) (by HEATHERC32)
    2 cup Kitchen Basic Unsalted Chicken Stock (by CSUCAM)
    8 serving Mt Olive Roasted Red Pepper (12oz jar) (by DGOLDBERG77)
    2 cup Fresh Express Spinach
    2 cup Colby and Monterey Jack Cheese shredded

Tips

Use low sodium stock, turkey sausage, no salt mushrooms, whole grain pasta to make recipe healthier.


Directions

Cut up sausage into bite sized pieces, and add to large saucepan with garlic, chopped red onion and mushrooms. Cook over medium heat until onions are soft. Add in penne pasta, chicken stock, spinach, roasted red peppers and jar liquid. Stir to combine. Cover for 8-10 minutes until pasta is al dente. Uncover, stir, add cheeses, stir and cook until pasta is the amount of tenderness you prefer. Remove from heat and serve.
