Introduction

Number of Servings: 12

Ingredients

    1 tbsp Canola Oil
    3 cups chopped Onions, raw
    3.5 cups (2 cans) Diced Tomatoes
    1.75 cups (1 can) Great Northern Beans, drained & rinsed
    3 cloves garlic, crushed
    8 tbsp Basil, chopped
    2 tbsp Parsley, chopped
    3 large Summer squash, quartered lengthwise & sliced

Directions

Saute onions in canola oil. Add tomatoes, beans, garlic, basil, and parsley. Bring to a boil. Add the summer squash, return to a boil, and simmer until squash is tender.

Serving Size: Makes 12 1-cup servings
