1/4 cup fat-free, less-sodium chicken broth
5 teaspoons butter, melted
1 large garlic clove, minced
1/2 cup panko bread crumbs
1 tbs grated parmigiano-reggiano cheese
1 tsp paprika
4 (6oz) skinless, boneless chicken breast halves
1/4 tsp salt
1/4 tsp dried italian seasoning
1/4 tsp ground black pepper
4 thin slices prosciutto (about 2 oz)
1/4 cup (1oz) shredded part-skim mozzarella cheese
Directions
Makes 4 servings (1 rolled chicken breast half)
Preheat oven to 350
Place broth, melted butter, and garlic in a small bowl. Combine bread crumbs, parmigiano-reggiano, and paprika in a medium shallow bowl.
Pound each chicken breast half to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle chicken with salt, pepper, and italian seasoning. Top each breast half with 1 slice prosciutto and 1 tbs mozzarella. Roll up each breast half, dip each roll in broth mixture and dredge in bread crumb mixture. Place rolls, seam side down in an 8-inch square baking dish coated with cooking spray. Bake at 350 for 28 minutes or until juices run clear and tops are golden.
