Ingredients

    Hot Water, 1 cup (8 fl oz)
    Dried Shiitake Mushrooms, 6 mushrooms
    Swanson Chicken Broth 99% Fat Free, 2 cup Garlic chopped, 2 clove
    Orzo Pasta, 0.33 cup
    Atlantic Salmon cut into two peices,1 fillet
    Roasted red bell peppers (drained&sliced) .4 cup
    Spinach, fresh chopped, 1 cup
    Basil chopped, 3 tbsp
    Scallions, raw, 3 tbsp chopped
    Parmesan Cheese, grated, .4 tbsp

Directions

In bowl pour hot water over mushrooms. Let stand 20 mins or until soft. Drian Mushrooms, reserving liquid. Rinse with warm water, and then drain. Squeeze excess moisture from mushrooms. Remove and discard stams, cut caps into strips.

Strain mushroom liquid through fine seive into a pot. Stir in broth and garlic. Heat to boiling o er med-high heat. Stir in orzo and reduce heat. Add salmon. Simmer uncovered for about 10 mins or until salmon flakes easily with a fork. Remove salmon with slotted spatula and keep warm.

Stir in mushrooms, peppers, spinach, basil and onions into broth. Cook 2 mins or until spinach is wilted and orzo is tender.

Place salmon in individual bowls, spoon broth mixture over top. Sprinkle with cheese.
