Ingredients

    1 serving Delicata Squash
    4 cup Baby Spinach (raw)
    20 Cherry Tomatoes, halved
    3 tbso Feta, crumbled

    1 lb Turkey, Ground turkey, 93% lean
    3 Tbsp Cheese Feta Crumbled
    2 serving Black Olives, Black Pearls, medium pitted, 5 olives
    1 tsp Pepper, black
    3 tbsp Parsley
    1 tsp Thyme, fresh
    3 tsp Fresh Oregano 1 teaspoon leaves

Tips

No need to peel the squash, it's soft edible and delicious.


Directions

Pre-heat oven to 350 degrees.

Trim the stem off of the delicata squash. Slice the squash lengthwise, scrape out the seeds, place on a baking sheet, drizzle with olive oil and season with a sprinkle of salt and pepper. Bake for 30 min or until tender.

While the squash is baking prepare the meatballs. Combine all ingredients listed in the meatball section (turkey, feta, olives, pepper, and herbs). Form into 12 balls.

In a non-stick skillet over medium heat saute the meatballs on one side for 5 min, flip (they should release from the pan once they are ready to flip) and cook for an additional 5 min.

Reduce the heat to low and add the spinach. Once the spinach is in the pan halve the cherry tomatoes and add to the pan. Cook for 1 additional min (just to take the chill of the tomatoes off).

Remove the squash from the oven and top with meatballs, spinach, tomatoes and additional feta.

Serving Size: Serves 4 (each person gets a quater or the squash and thee meatballs)
