Ingredients

    1 8oz pkg fat free cream cheese
    1 (4 svg.) package sugar free instant butterscotch pudding
    2 cups (1 15 oz. can) pumpkin puree (canned pumpkin)
    1/4 cup fat free sour cream
    1/2 cup plus 2 tablespoons Reduced Fat baking mix
    2 eggs or equivalent in egg substitute
    1/2 cup brown sugar (I use sugar free)
    1 tsp. vanilla extract
    1 tsp. pumpkin pie spice
    1 cup fat free frozen whipped topping, thawed
    1 tblsp. chopped chopped pecans

Directions

Mix all ingredients except topping and pecans. Bake in a Pam'd pie plate (9") for 50-60 minutes until knife inserted comes out clean.

1/8 pie is 131 calories; 3 gms fat, 7 gms protein; 125 mg. calcium; 2 gm. fiber
