Introduction

This is a vegan take on a classic. You can change the beans and veggies to suit your tastes and to add variety. This is a vegan take on a classic. You can change the beans and veggies to suit your tastes and to add variety.
Number of Servings: 8

Ingredients

    2 cups of pinto beans
    1 cup of brown rice
    1/2 cup of walnuts, finely chopped
    2 tablespoons of olive oil
    1 tablespoon of flax seed meal
    1 clove of garlic, minced
    1 onion, minced
    1 large carrot, minced
    2 stalks of celery, minced
    1/4 cup tomato juice
    1/4 teaspoon of thyme
    1/2 teaspoon of sage
    salt and pepper to taste.

Directions

Saute the veggies in the oil. When they are tender mix them with all the other ingredients in a mixing bowl. Use a potato masher to mix it all together. The consitancy should be that of a regular meat loaf. Pour mixture into a loaf pan and bake at 350 for about an hour. Let the loaf rest for approx. 15 minutes before serving. Slice this into eight pieces and serve with some veggies or a salad.
