    7 Chicken Breast
    8 leaves Basil
    3 clove Garlic
    4 tbsp fat free Ricotta cheese
    1/3 cup Extra Light Olive Oil
    1/3 cup Parmesan Cheese, grated
    Salt and Pepper to taste (I didn't use any salt)


Preheat oven to 375*. Puree basil, garlic, ricotta, olive oil, Parmesan and salt and pepper. Pound out chicken and spread mixture over chicken. Place on non-stick baking sheet and bake for approx 15-20 min or until chicken is cooked all the way through. Only cook until it's no longer Pink in the middle - other wise, you'll dry it out.
