Ingredients

12 tbsp Jif Creamy Peanut Butter, reduced fat
2 cup HyVee Old Fashioned Oats
8 tbsp Hershey's Special Dark Chocolate Chips
5 oz coconut flake, unsweetened (by FOODISGOOD4YOU)
5 serving honey (raw, trader joes, organic) (1 tbs)
1 tsp Vanilla Extract

Instructions
1. In a large bowl, mix together the Oats, Chocolate Chips, and Coconut. Add the Peanut
Butter, honey, vanilla and mix well until evenly combined.
2. Chill in the refrigerator for an hour then roll out balls about an inch in diameter {use a
cookie scoop or your hands}.
3. Store in an airtight container in the refrigerator or on the counter. You can also freeze
these.
Notes
Other options: add raisins, dried cranberries, apricots, white chocolate chips, caramel chips,
carob chips.
Instead of coconut or in addition use ground flax seed Use almond butter instead of peanut
butter.
If the dough seems to dry add a bit more peanut butter and stir until the consistency becomes
thicker and can be made into balls.
