Introduction

Ingredients

    1/2 cup TVP granules
    3 - 4 tbsp hot vegetable broth
    1/3 cup red onion, minced
    2 tsp olive oil
    1/2 cup diced tomatoes
    1/2 tsp salt
    1 tbsp garlic powder
    3/4 tsp mustard powder
    1 tsp Tabasco
    1 tsp curry powder
    1 tsp cornstarch
    2 1/4 cups flour
    1 tbsp curry powder
    1/2 cup shortening
    1 egg yolk
    1/4 cup cold water

Directions

Combine TVP and broth in a small dish. Let stand 10 minutes.
Saute onion in the olive oil over medium heat until golden.
Stir in diced tomatoes, salt, garlic powder, mustard powder, Tabasco and curry powder.
Cook, stirring, 1 minute.
Stir in the cornstarch, followed by the TVP, and cook 1 minute more.
Remove from heat and set aside to cool slightly.
Preheat oven to 450F.
Combine flour and curry powder in a large bowl.
Cut in shortening until mixture resembles coarse meal.
Beat together egg yolk and water.
Stir into flour mixture until it just forms a pastry dough.
Roll out on a floured surface and divide into 15 squares.
Place equal amounts of filling on a 1/2 of each square and fold pastry over it, pressing with fork to seal seams.
Place prepared pastries on baking sheets. Dock each pastry with a fork.
Bake for 12 minutes, serve immediately or cool completely on sheets for freezer storage.
