Number of Servings: 5

Ingredients

    5 serving Trader Joe's Brown Rice and Quinoa Spaghetti Pasta - 2oz dry, 1/8 package (by MIGGIMAG)
    1.5 tbsp Extra Virgin Olive Oil
    1 tbsp Butter, salted
    2 cup cherry tomatoes Red Ripe Tomatoes
    5 tbsp Cilantro, raw
    2 oz Pine Nuts
    5 tbsp Parmesan Cheese, shredded
    2 medium (4-1/8" long) Scallions, raw
    salt and pepper to taste

Directions

Cook pasta according to package directions. Drain pasta and set aside. place oil and butter in warm pot and blend. Add the pasta back to the warm pot and coat pasta with warmed oil and butter. Add the rest of the ingredients to the pot. This recipe is good warm or cold. Feel free to add other vegetables or lime juice to the pot for variety or add chicken or bacon to make it a main pasta dish. I've done it all.
