Introduction

Ingredients

1 1/2 Cups finely crushed graham crackers (approx. 22 squares)
1/2 Cup Splenda Sugar Blend for Baking (divided)
6 Tbsp Smart Balance Buttery Spread - melted 12oz. 1/3 Fat Cream Cheese, softened
2 Tbsp. Milk, nonfat
1 Cup Cool Whip Lite - thawed
2 Cups Boiling Water
1 pkg. (8 serving) Sugar Free Jello Strawberry
1 1/2 Cups Cold Water
2 Cans (8.25 oz each) Delmonte Mandarin Orange Segments in lite syrup - drained
Directions
MIX: graham crumbs, 1/4 c. sugar and butter. Press firmly onto bottom of 9x13 baking pan; set aside.
BEAT: cream cheese, remaining 1/4 c. sugar, and milk until smooth. Gently stir in whipped topping. Spread over crust. Refrigerate.
MEANWHILE: stir boiling water into gelatin at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 1 1/2 hours or until slightly thickened. Stir in orange segments. Spoon over cream cheese layer.
REFRIGERATE: 3 hours or until firm.
Cut into 20 squares. If desired, use additional whipped topping to garnish each serving.
**I use the whole 8oz. tup of cool whip lite. I think that it spreads easier.
***I have also made it with cherry sugar free jell-o and pineapple. I am sure you could use any type of jell-o and fruit.
