Introduction

This is a healthier twist on regular banana bread, with more fiber and less fat. If you choose you may substitute the white flour with wheat flour and make it even healthier.

Ingredients

    1 cup Bananas mashed
    1/2 cup Granulated Sugar
    1/3 cup Applesauce
    2 large egg whites
    1/3 cup skim milk
    1 1/4 cups flour
    1 cup Kellogg's Raisin Bran Crunch Cereal
    1/2 cup chopped pecans
    2 tsp. Baking Powder
    1/2 tsp. Baking Soda

Directions

makes 16 , 1/2 inch slices
Preheat oven 350.
lightly spray an 8 x 4 loaf pan.
Mix mashed bananas, sugar, applesauce,
egg whites, and skim milk in a medium bowl.

In a seperate bowl mix together the flour, Baking powder, Baking soda, bran cereal, and pecans.
Mix together the dry ingredients with the banana mixture just until moistened.

Pour into the already sprayed loaf pan and place in oven, in the middle of rack and bake for
55 - 60 minutes or until toothpick inserted comes out clean with no wet batter on it.

Cool for 10 minutes in pan then turn out onto a cooling rack and continue to cool completely before storing or freezing for later use. If you freeze your individual slices, put wax paper between slices and store in freezer bag.
