Introduction

Ingredients

    2 cup White Rice, long grain, cooked
    1can food club black beans (drained and rinsed)
    1.25 cup Diced Tomatoes & green chilies (1 can Rotel)
    3 tbsp Ketchup, Heinz
    1 leek rinsed and chopped into half moons
    2 clove Garlic crushed
    1 tsp Cumin (ground)
    1 tsp Chili powder

Tips

Sub in brown rice for less calories. I used white since I had extra made


Directions

Spray pot with cooking spray. Add leeks and garlic and saute until soft. Add drained beans and cumin and chili powder. Cook for 1 minute to release the spice flavor. Add the Rotel tomatoes with green chilies. Stir in the cooked rice and the ketchup. Heat until hot. Garnish with cilantro and a lime wedge if you like.
Makes 6 servings of 2/3 cup each.
