Ingredients

    16 oz Tyson boneless, skinless chicken breast
    6 spear, medium (5-1/4" to 7" lo Asparagus, fresh
    1 tbsp Kraft Miracle Whip Light Dressing
    0.25 cup Cheese, Mozzarella Cheese, Fat/Free, Shredded Kraft
    .13 cup Progresso Bread Crumbs - Italian Style
    .5 tbsp Basil
    1 clove Garlic
    .5 1tsp Olive Oil
    1 tsp Pepper, black

Directions

Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a glass baking dish with oil. To prepare the chicken breast, place it in a plastic gallon storage bag and then, using a meat mallet and gentle strokes, flatten the breast until it is about 1/2 inch thick. Remove the breast from the bag and on a clean working surface, lightly salt and pepper both sides of the breast and set aside. Prepare the garlic by mincing and then mashing it, stir in the basil flakes and olive oil. Spread this mixture over one side of the chicken breast. Trim the asparagus to remove the hard stalk and place across the chicken breast. Add the mozzarella cheese and roll the breast from one end to the other. Place seam down in the baking dish. Spread the mayonnaise over the breast and then lightly coat it with bread crumbs. Place in the oven and cook for approximately 30 minutes or until the interior temperature of the breast reaches 165 degrees F or 60 degrees C. After being fully cooked, cut the breast in half and serve with your favorite mixed vegetables for a balanced and tasty meal! Serves two with 8 ounce portions.
