Ingredients

    1 lg red bell pepper
    2 lg tom or 6 plum tomatoes (1 lb)
    1 lg cucumber, peeled, halved, seeded
    1/2 med yellow onion
    1 c tom juice
    1/2 c chopped fresh cilantro, no stems
    1/4 c balsamic vinegar
    2 Tbl fresh lime
    Salt pepper to taste

Directions

broil pepper and take skin off.
chop onion, tom and cucumber
put aside 1/3 of each
put rest in blender and blend.
blend in pepper
add vinegar, cilantro and tom juice
chill
