    For crust -
    1 cup all-purpose flour
    1/2 tsp salt
    1/3 cup canola oil
    2 tb water

    For filling -
    1 can Libby's pumpkin pie mix
    1 can (5 oz) evaporated milk
    2 large eggs
    1/2 tsp ginger


Make pie crust. Roll into circle between two pieces of plastic wrap. Removing wrap, put into pie pan. Heat oven to 425 degrees. Mix the filling ingredients in large bowl for a few minutes until well blended. Pour into pie shell. Bake for 15 minutes. Reduce heat in oven to 350 degrees. Finish baking for 55 to 60 minutes until knife inserted in pie middle comes clean. Serves 10.
