Ingredients

    1 Flour tortilla (approx. 8" diameter)
    1 large egg
    1/2 cup frozen mixed vegetables
    Salt, pepper, spices to taste

Directions

In a small dish, microwave the frozen vegetables for 30-60 seconds to thaw. Break the egg into the same dish, add desired spices, and stir. Pour the mixture into a small skillet and cook over medium heat, stirring often, until the egg is cooked.

Microwave the flour tortilla for 5-10 seconds. Place the egg mixture on the tortilla and wrap it like a burrito.
