Ingredients

    1/2 cup Margarine, Benecol
    1/2 cup Granulated Sugar
    1/2 cup, packed Brown Sugar
    1 tsp Vanilla Extract
    2 large Egg, fresh, whole, raw
    1 1/4 cup Whole Wheat White flour
    1 tsp Baking Powder
    1 tsp Salt
    1 tsp Baking Soda
    1 small (6" to 6-7/8" long) very ripe Banana, mashed
    1/2 cup Buttermilk, no fat
    1 cup, halves Apricots, dried, chopped in food processer
    1 cup Rolled Oats

Tips

Check doneness at 50 minutes. Toothpick should not come out dry.


Directions

Beat margarine until creamy gradually adding both sugars beating until thoroughly blended. Beat in vanilla and eggs. Sift flour, salt, baking powder, and soda together and add to creamed mixture gradually until absorbed. Add buttermilk. Stir in Bananas, apricots and oats. Pour into greased loaf pan and bake 1 hour or make 9 muffins and bake 30-35 minutes.
