Ingredients

    2.8 cup Beans, great northern
    5 oz Fish, Swai Fillet
    1.5 cup Spinach, fresh
    1 cup, strips or slices Carrots, raw
    .5 cup, chopped Onions, raw
    2 clove Garlic
    2 stalk, medium (7-1/2" - 8" lon Celery, raw
    4 cup (8 fl oz) Water, tap
    1 serving crushed red pepper (by LILYBELLE12)
    0.25 tsp Cajun Seasoning (by MELISSA_X0)
    1 tsp, crumbled Bay Leaf
    .5 tbsp Argo Cornstarch
    2 serving RICE - Dynasty Jasmine Rice 1/2 cup cooked
    1 fl oz Lemon Juice

Directions

Preheat the oven to 425.

Cook the onions and garlic in a tsp of olive oil on medium heat for 4 minutes or until the onion is translucent.

Now add onions, garlic, celery, spinach, carrots, water (or broth), cornstarch, and beans into a food processor and blend until ingredients are mixed but still distinguishable from one another. If you don't have a food processor, chopping the vegetables until fine should suffice. Place mixture into a saucepan, add spices and bay leaf, and cook over medium heat for 20-30 mins, stirring often.

Get a small cookie sheet, cover it in aluminum foil, and spray foil with Pam. Slice swai fillet into small cubes and place on the cookie sheet. Sprinkle swai with salt, pepper, Cajun spice, and lemon juice. Place swai into prepared oven and cook for 10-15 minutes or until fish is opaque white (no pink visible).

Cook rice per box instructions.

Toss cooked swai and rice into soup and mix in. Remove from heat once the soup has thickened. Remove and discard bay leaf. Season with salt and pepper to taste. Garnish with lemon juice.
