Ingredients

    4 oz chicken breast, skinless, uncooked (by CLAYMACT)
    .5 oz Chicken, rotisserie, Pilgrims Pride Traditional seasoning (by NORALEE1960)
    3 cup Baby spinach fresh (by PHILRUFF)
    .5 cup, chopped Onions, raw
    1.75 cup, pieces or slices Mushrooms, fresh
    .5 tbsp Extra Virgin Olive Oil
    .5 cup, chopped Pecans
    4 serving "Great Value" Pepper Jack Cheese, Sliced (1 slice)

Directions

1. In a leg skillet, saute the spinach, mushrooms, onions and pecans in oil until mushrooms are tender. Set aside and keep warm. Sprinkle chicken with seasoning.

2. Moisten a paper towel with cooking oil; using long handled tongs, lightly coat the grill rack. Grill chicken, covered, over med heat or broil 4" from heat for 4 to 5 minutes on each side or until a thermometer reads 170^

3. Top with cheese. Cover and grill 2-3 minutes longer or until cheese is melted. Top chicken breasts with spinach mixture.
