Introduction

Ingredients

    1/8 cup Organic Coconut Palm Sugar
    1/4 cup coconut flake, unsweetened
    8 oz Apple Sauce-Natural-no sugar added
    1 medium (7" to 7-7/8" long) Banana, fresh
    1 TBSP Bob's Red Mill - Chia seeds
    1/3 cup, unthawed Blueberries, frozen (unsweetened)
    1/8 cup Sunsweet, Dried Cranberries
    1 TBSP Pepitas (Pumkin Seed Kernals)
    1/4 cup Almond Raw Sliced
    1 tsp Cinnamon, ground
    3 cups Old Fashioned Quaker Oatmeal- Plain

Tips

I have used Quick or Old Fashioned or a combination of both and they turned out ok. I used frozen cherries this last time and like them better than with blueberry and cranberry.


Directions

Mix apple sauce, banana, palm sugar, Chia seeds, cinnamon in mixer.
Chop coconut flakes, almonds, pepitas and add to wet mixture.
Add blueberries and dried cranberries.
Add in oatmeal 1 cup at a time. Mix until blended.
Spread on greased small cookie sheet.
Bake 20-22 minutes. Cool, cut into bars, and store in tupperware/ziplock in refrigerator or freezer.

Serving Size: 10 servings (2 bars per serving)
