Introduction

This is a very loose interpretation of migas but they are wonderful nontheless! This is a very loose interpretation of migas but they are wonderful nontheless!
Number of Servings: 1

Ingredients

    1 Tbsp Smart Balance Margarine Light
    1 6 inch corn tortilla
    1 large egg
    4 large egg whites

Directions

Melt margarine in a small frying pan. Tear up tortilla into smallish pieces (say 3/4 inch or smaller pieces) and saute in pan until the pieces start to become firm (but not hard, really to your taste). Add eggs and scramble.

Some people like to add hot sauce (salsa picante) or salsa or even add bacon or pieces of leftover meat. Just make sure you consider the calories for anything you add.
