Ingredients

    1 cup Milk, 3.25%
    1 tsp Vanilla Extract
    4 tsp Baking Powder
    1.25 cup Granulated Sugar
    8 tbsp Crisco, 0 grams trans fat, All-Vegetable Shortning
    3 large Egg white, fresh
    1 tsp Salt, Sifto Table Salt
    1.25 cup Bob's Red Mill Gluten Free All-Purpose Baking Flour (by JO_JO_BA)

Directions

cream together shorting, and 2 T of the milk till fluffy, the add mixed dry ingredients, alternating with 2/3 c milk. Separate egg withes and mix with milk. Pour into bowl and mix till smooth. pour into muffin cups, or 2 8'" round cake pans.
Bake 350 F 20-23 min (muffins), or 30-35 min cake pan. Be sure to grease and flour the pans for easy removal.

Serving Size: makes 12 muffins or 2 8" round cake pans
