Ingredients

    2 cups Apple juice, unsweetened
    3 cups diced Apples, fresh with skin
    1 cup, packed Brown Sugar
    1/2 cup Extra Virgin Olive Oil
    1/2 cup Honey
    5 large Eggs
    2 cup Flour, white
    2 tsp Baking Soda
    1 teaspoon salt
    4 cups Frosted Shredded Wheat Bite Size Cereal (crushed)

Directions

In large pot, bring apple juice to a boil. Add shredded wheat and cover with lid. Chop apples and add to this pot; replace lid.
In a large mixing bowl, combine remaining ingredients. Mix until well blended. Add shredded wheat, juice, and apple mixture. Stir well. Fill greased or paper lined muffin cups 3/4 full.
Bake in a preheated 400 degree F (205 degree C) oven, for 20 to 25 minutes. Cool in pan 10 minutes before removing to a wire rack.

Serving Size: Makes 36 regular size muffins, or 18 jumbo muffins.
