A traditional butternut squash soup recipe. A traditional butternut squash soup recipe.

    2 lbs Butternut Squash chopped into 1" cubes
    1 1/2 cups onions, chopped
    2 Carrots peeled and chopped
    32 fl oz Chicken Broth
    1/2 tea salt
    2 tbsp Butter
    1/2 cup of heavy cream or whipping cream
    1/2 tea nutmeg


I use freshly ground nutmeg. Don't use old nutmeg.


In a medium saucepan, combine squash, onion, carrots, broth and salt. Simmer, uncovered, until squash is very tender, about 40 minutes. Puree soup in a blender or food processor with the butter. Whisk cream into soup.

Serving Size: 1 cup
