Introduction

Ingredients

    1 medium (2-1/2" dia) Onions, raw
    1 serving 1 Med. Green Bell Pepper
    1 eggplant, unpeeled (approx 1-1 Eggplant, fresh
    1 tbsp Extra Virgin Olive Oil
    1.5 cup Tomato Sauce, with tomato tidbits
    16 oz Shrimp, raw

Tips

We use left over pizza sauce and whatever veggies are convenient.


Directions

Saute veggies in olive oil, starting with onion. add a splash of water and cover. Let cook ~5min.
Add tomato Sauce. Let simmer.
Add shrimp - cook through
Serve over rice, cauliflower rice, or with dipping bread
