Ingredients

    2 large (3-1/16" dia) Oranges
    .67 cup, chopped Scallions, raw (green onions)
    .25 tsp Tabasco Sauce
    1 tbsp Olive Oil
    2 serving Brown rice (1 cup cooked)
    2 medium whole (2-3/5" dia) Red Ripe Tomatoes (chopped
    4 tbsp Cilantro, raw (1/4c chopped)
    20 oz Atlantic Salmon (fish) (.5 filet option = 198g)
    8 cup Green Giant Frozen Mixed Vegetables

Tips

substitute any hot sauce, I just used tabasco as it's widely known


Directions

1. Combine oranges, tomatoes, green onions, cilantro and hot pepper sauce in large bowl. Season, if desired, with salt and ground black pepper; set aside.
2. Spray salmon with butter substitute spray and sprinkle, if desired, with salt and pepper to taste. Grill or broil salmon, turning once, 10 minutes or until salmon is opaque. Serve salsa with salmon.
3. Serve with vegetables and rice.
