Introduction

Ingredients

    2 serving Bacon - Farmland Thick Sliced Bacon
    1 small Onions, raw
    1 clove Garlic
    12 oz Diet Coke
    .24 cup Yellow Mustard
    3 tbsp Cider Vinegar
    3 tsp Colgin Liquid Smoke (by BRIEANNAKIM)
    3 tsp French's Worchestershire Sauce (by ONLYPLAYING)
    1 can (6 oz) Tomato Paste
    Cumin
    Paprika
    Cloves
    a few dashes of hot sauce*
    Splenda*


Directions

Dice and saute bacon, then add chopped onion and garlic. When onion and garlic have softened, add Diet Coke (with Splenda if available), tomato paste, mustard (I use deli) and vinegar. Add cider vinegar, liquid smoke, Worchestershire Sauce (more or less to taste). Add spices -- I add cloves, cumin, and paprika to taste. Bring to boil and simmer for a minimum of 30 minutes. I use an immersion blender to blend the onions and bacon to make a smooth sauce. Freezes well. Won't win a taste test against the real thing, but it is pretty darn good if you are watching carbs and calories. I use it with ribs and to make pulled pork (I rinse the cooked pork to reduce fat) and it is a pretty good substitute. Adjust the seasonings to your taste. You can also add a few dashes of hot sauce or Splenda if you need either more heat or more sweetness.

Serving Size: Makes about 9, 1/4 cup servings
