Introduction

This is an easy, full-bodied stew with flavors of Mexico - chili, cumin and garlic. This is an easy, full-bodied stew with flavors of Mexico - chili, cumin and garlic.

Ingredients

    I onion, diced
    1 small can tomato sauce
    1 15 oz can diced tomatoes, with juice
    1 large can hominy, drained
    1 15 oz can corn, drained
    1 large can red kidney or black beans, drained
    1 cup water
    3 tbls chile powder(s) of your choice
    2 tsp onion powder
    2 tsp garlic powder
    2 tsp cumin
    1 tbls dried oregano
    1 tbsp chopped garlic

Directions

Mix all ingredients together. Pour into crockpot and cook on low for about 6 hours. Stir and serve. Good with cornbread or tortillas. Makes 6-8 1 1/2 cup servings.

    Very Good
    I tried this and almost everyone like it - but they all ate it! I didn't have Mexican oregano so I used 1 tbsp menudo mix and 2 tbsp of chili powder. I also wasn't looking for a "vegan" recipe but rather a way to use a can of hominy so I added some shredded chicken. Very tasty! - 8/3/08
