Ingredients

2 cups White Wheat Flour
3 tsp Baking Powder
1/2 tsp Kosher Salt
1 tsp Cinnamon
1/2 tsp Nutmeg
zest of 2 oranges
2 large eggs, seperated
1/4 cup Organic Cane Sugar
1 tsp Vanilla Extract
1 cup Buttermilk
5 tbsp Butter, unsalted - melted
3/4 cup Orange Juice
1/2 cup Nestle Dark Chocolate Morsels - 53% Cacao
1/8 tsp Cream of tartar
Directions
Warm up your waffle maker.
Combine flour, baking powder, salt, cinnamon, nutmeg and zest in a large bowl and set aside.
Separate the egg yolks from the whites.
In a medium bowl beat the yolks with the sugar. Whisk in the vanilla, milk, butter and orange juice.
Pour the wet ingredients into the flour mixture and stir until just combined, do not over mix.
In a small bowl beat the egg whites with cream of tartar with an electric beater on medium for about a minute or until you have stiff peaks.
Fold in a the egg whites a third at a time. Be careful not to deflate the egg whites and don't over mix.
Spray your waffle maker with non-stick spray, make sure to get both the top and bottom. Add half a cup of batter, sprinkle on chocolate chips and cover with another half cup of batter. Cook to the specifications of your waffle maker. Use a spatula to help remove the waffle and spray the maker between each waffle.
