Ingredients

    0.5 tsp Salt
    3 large Egg, fresh, whole, raw
    3 medium Zucchini, baby
    0.33 cup Flour, white
    2 large Mushrooms, fresh
    1 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
    1 serving Sweet mini peppers (3)
    1 tbsp President's choice 100% parmesan grated cheese blue menu (by JLPJP123)
    0.5 cup Kraft Tex Mex Part skim mozzarella with cheddar and monterey jack shredded cheese (by HOPEFULANGE)
    .5 tsp Salt
    1 serving Boca Italian Sausage
    .25 cup Spaghetti/Marinara Sauce (tomato sauce)

Directions

Preheat oven to 450
Shred zucchini. Using a clean tea towel, squeeze as much liquid as possible from the zucchini (works best if you work with ca. a cup at a time).
Mix together zucchini, flour, salt and eggs, and any seasonings you might wish to add.
Place a sheet of parchment paper on a baking sheet, then spread zucchini mixture in a thin layer.
Bake for 25 mins or more, making sure that edges are golden brown.
Reduce oven heat to 350.
Top cooked crust with vegs, sauce, meat, seasonings, cheese, etc. of your choice.
Bake an additional 10-15 mins, until cheese melts and toppings are warmed through.

Serving Size: Makes 12 3x4 inch pieces
